Summer Couscous Salmon Salad
Use a variety of fresh vegetables that appeal to you. Here’s what I used and it was refreshing and flavorful.
1 lb. Virgin Bay Ground Coho Salmon
1 cucumber – chopped and pealed
1 yellow and 1 orange bell pepper – chopped
Medium red onion – chopped
1 jar Kalamata Olives – chopped
Fresh Parsley- chopped
Fresh Basil – chopped
2 cups Israeli Couscous
1 container crumbled Feta Cheese
Salt and Pepper to taste
Combine all ingredients and chill before serving – I garnished with fresh Basil – YUM!
